Today, we’re throwing down on Chili Colorado — a deep, rich, red chili made with dried peppers, tender chunks of beef, and flavor that slaps harder than your uncle’s war stories. Make the Chili Sauce – Toast dried chilies (California, ancho, pasilla). – Remove seeds/stems, steep in hot stock, blend smooth. 2. Prep the Veggies – Rough chop onion, garlic, celery, and tomato. – Use what you have — it’s flexible. 3. Cube & Season Beef – Use marbled chuck roast. – Season with salt, pepper, cumin, ancho chili powder. 4. Sear the Meat – Brown in batches, spice-side down, one side only. – Don’t crowd the pot — get that crust. 5. Cook Down the Veggies – Sauté garlic, onion, celery, then add tomato. – Lid on, cook ~15 min to break down. 6. Alley Cat Tattoo 2006
Just an old cheesy video I made for Alley Cat over ten years ago just trying it out. Figured this would make a good first try for our channel. The song is "On the Bus" by Brave New World, a short-lived Roanoke band featuring both Troy Herstine, one of the original owners of Alley Cat, and Brian Gray who tattooed at Alley Cat for a long time.
